Is abandoning the Sunnah of hastening the breaking of the fast, which the Prophet, may Allah's prayers and peace be upon him, consistently observed, a normal matter, and what is the appropriate guidance for one who objects to that?

It is from the Sunnah to hasten breaking the fast after verifying the sunset. Whoever delays doing so, without believing in its superiority, has not committed a sin, but has merely abandoned what is better. However, if one believes in its superiority, then their action is reprehensible. This matter should not be a cause for dispute.
