What is the ruling on confiscating items taken from students for violating rules, such as sunflower seeds, chewing gum, prayer beads, and rings, and what should be done with them?

If students are informed about prohibited items in the classroom, then it is permissible to punish the violator by confiscation. If the items are minor, they should be disposed of. If they are valuable, they should be returned to the student or their guardian at the end of the day or the academic period, depending on the school's interest. Sheikh Ibn Uthaymeen permitted punitive confiscation of property if students were warned in advance, provided that valuable items are kept safe and returned to the student or their guardian at the end of the academic year.
