How is Zakat calculated for a daily livestock fattening and selling project, in which livestock are purchased, fattened for three months, and then sold?

You must calculate your cash at the end of each hawl (lunar year) from the date of purchasing the livestock (if it is below the niṣāb, otherwise its hawl follows the original niṣāb). Then, the market value of the livestock is added to it. If the total reaches the niṣāb (85 grams of gold or 595 grams of silver), then one-quarter of one-tenth (2.5%) must be paid, and there is no zakat on the livestock itself because it is trade merchandise.
