Is it obligatory for me to imitate the Imam in everything, even if it contradicts the Sunnah or the manner of the Prophet's prayer (peace be upon him)?

The follower must follow their Imam in omitting acts that do not affect the validity of the prayer if performing them would compromise following the Imam, because of the Prophet's (peace be upon him) saying: "Indeed, the Imam was appointed to be followed." As for sunnah acts whose performance does not entail preceding or falling behind the Imam, there is no harm in performing them even if the Imam omits them.
