Is it permissible for me to take the difference in currency exchange rates after converting an amount from Saudi Riyals to Egyptian Pounds, and then converting it back to Saudi Riyals to deliver it to the family of its owner? And is it obligatory for me to inform him of this?

You must repent to Allah for disposing of entrusted money without the owner's permission and pay the profits realized from this disposal to the owner, because in this case, the profit belongs to the owner, as stated by Imam Ahmad.
