To what extent is a man entitled to interfere in his wife's personal affairs, and must a woman obey her husband in matters she dislikes, if it does not pertain to the marital bed? And what is the correct understanding of Qawamah (guardianship/maintenance)?

The husband's right over his wife is great, and her obedience to him in what is good and her excellent devotion to him are among the reasons for her entry into Paradise. However, her obedience to him is not absolute; rather, it is restricted by the bounds and etiquettes of Islamic law. It should not be in matters that contravene the Sharia, harm her, or are beyond her capacity. It is obligatory only in matters related to marriage and its specific affairs. The foundation of the marital relationship is affection and mercy. Guardianship (qawamah) does not mean domination and tyranny, but rather the safeguarding of religious and worldly interests with mercy and kindness.
