Is it permissible to study something that requires the use of pig fat in preparing pastries, given the availability of another job opportunity with a low salary?

There is no objection to a Muslim woman working in a permissible field that is suitable for her, especially when there is a need, provided that her work adheres to the Sharia (definition) guidelines. It is not permissible to work or study if it necessitates the use of pig fat, as it is forbidden. As for giving lectures in an Islamic center, there is no objection to it if it adheres to the Sharia guidelines.
