This is because a Muslim is required to preserve their own self, and the Prophet, peace and blessings be upon him, said: "There should be no harm nor reciprocating harm." This harm removes the food from its original ruling, just as juice, if it ferments to the point of intoxication, becomes forbidden to consume.
