What is the ruling on working for a company that provides hotel services to foreign workers and has a bar managed by another person, knowing that the nature of my work is limited to taking basic information from customers?

If the questioner's job is to collect data from the complex's general customers, then there is no harm in it. However, if their job is specifically to collect data from patrons of a wine tavern, then this is not permissible, as it falls under aiding in sin, due to the Almighty's saying: "And do not cooperate in sin and aggression."
