Will a human medicine student be rewarded for seeking knowledge, and what are the proofs for that, and will he be like a mujahid in the path of Allah if he is residing in a country other than his own?

Learning medicine and other sciences may be a communal obligation (fard kifaya), and the one who undertakes it will be rewarded if their intention is to fulfill this duty. If the communal obligation is fulfilled, then learning these sciences becomes permissible (mubah), and the one who undertakes it will be rewarded if they intend thereby to draw closer to Allah. As for likening a student of this knowledge to a mujahid (one who strives in the path of Allah), there is no evidence for this.
