Is it permissible for me to take an amount equivalent to the minimum monthly average of the percentage from the company's money, after the employer reneged on paying the percentage agreed upon in the initial contract, by analogy with the hadith of Hind with Abu Sufyan?

It is impermissible to combine a percentage of profit with a fixed salary according to the majority of jurists. However, the Hanbalis held the view that it is permissible to agree upon a percentage of profit only. Therefore, the company owner's decision is correct, and the questioner has the right to negotiate the amount of the fixed salary.

As for what has passed, nothing is required concerning it due to the questioner's ignorance of the ruling and his agreement with a weak narration according to the Hanbalis. The hadith of Hind is completely different from the questioner's situation, as it discusses obligatory maintenance, the right to which is established.
