If pasteurization prevents fermentation, then the juice is permissible (halal), because the reason for prohibiting alcohol is its intoxicating effect. It has been narrated from the Prophet, peace and blessings be upon him: "Every intoxicant is unlawful (haram)," and "Every intoxicant is khamr (wine), and every intoxicant is unlawful," and "What intoxicates in large quantities, a small quantity of it is unlawful." Umar ibn al-Khattab stated that khamr is that which clouds the intellect. Scholars have differed concerning juice that has passed some time without boiling and becoming intoxicating, and the preponderant opinion is that it is permissible as long as it has not boiled and become intoxicating.
