What is the Sharʿī ruling on buying and repairing car spare parts and profiting from them, knowing that I bear responsibility for any damage or unsuitability, and sometimes an agreement is made with the mechanic to leave a profit margin for me?

As long as you work with the mechanic and he entrusts you with purchasing or repairing (items), you are his agent. Therefore, it is not permissible for you to profit from the purchase or repair by taking any money without his knowledge.
