Do the following verses: "Indeed, young women are a garden whose basil is fresh life, so how can we turn away from them?", and "Love does not awaken its companion throughout time, but rather it strikes the madman instantly," and "O mistress of the chamber who has taken away my piety, in any case, I cannot do without you" contain a violation of Sharia, and is it permissible to use the rest of the poem after deleting the offending verses?

It is permissible for a man to recite verses of ghazal (love poetry) about his wife. It is also permissible to do so about others, provided that he does not intend to express love for a specific woman and that it does not lead to temptation or encourage immorality. If a poem contains both permissible and impermissible elements, there is no objection to confining oneself to the permissible parts. A Muslim should not extensively occupy himself with ghazal poetry; rather, he should strive to utilize his time in more beneficial pursuits, such as reciting the Quran, memorizing hadiths, and reading beneficial books.
