Is it permissible for an accountant to take his unpaid financial dues from an oppressive sports club that delays in paying dues and refuses to increase salaries despite having money, or is that considered theft?

Delaying a worker's wages and procrastinating in fulfilling their right is a forbidden injustice, due to the saying of the Messenger of Allah, peace and blessings be upon him: "Give the hired worker his wages before his sweat dries." The intention here is to promptly pay the wage as soon as the work is completed.

As for equalizing workers' salaries, it is not religiously obligatory, even if their qualifications and work are the same. The matter refers back to the agreed-upon contract, and the worker has the right to refuse to renew the contract if they do not receive the salary they desire.

It is not permissible for workers to take items, such as drinks, without the employer's permission.

Regarding taking entitlements without the employer's knowledge, it is necessary to clarify the nature of these entitlements and whether the employer has wronged the worker in their right.
