Is it permissible for the aqiqah for a male to be with two different animals, such as one being from cattle and the other from sheep, or one being from chickens and the other from sheep?

The Sunnah is to sacrifice two sheep for a boy and one sheep for a girl as 'aqiqah. It is permissible for the 'aqiqah to be from camels or cattle, provided they are of the type that is valid for sacrifice (udhiyah). Chickens are not sufficient. It is also permissible for someone who cannot afford two sheep to sacrifice one sheep for a boy.
