What is the explanation of the hadith: "By Allah, my soul is not content that the boy should see me when he has outgrown suckling"?

The statement by Umm Salamah (may Allah be pleased with her) is to clarify that suckling a boy after he has been weaned is not considered (for establishing fosterage), and this is the view of the majority of scholars. Aishah (may Allah be pleased with her) disagreed with her on this, citing the incident of Sahlah bint Suhayl and her suckling of Salim when he was an adult.
