Bullfighting is not permissible in Islamic law because it involves provoking and torturing an animal without any benefit, merely for sport. The Prophet, peace and blessings be upon him, forbade inciting animals to fight one another. Watching it is also forbidden because it constitutes watching a prohibited act.
