Which is better for a person: to give charity with money during their lifetime, or to write it in a will to be disbursed after their death?

The greatest of charities in reward is that which a Muslim gives while healthy and covetous, fearing poverty and hoping for wealth, and does not delay it until his appointed time (of death) approaches. The reason for its preference is that covetousness is غالب (predominant) during good health. Thus, the charity of a healthy and covetous person is more sincere in intention and greater in reward than that of someone who gives charity while on their deathbed, because Satan discourages him from giving charity during good health out of fear of poverty, and may even adorn for him injustice in the will or retracting it. So, charity given during life and health is better than that given after death or during illness.
