Do the children have the right to prevent their father from remarrying?

Sons do not have the right to prevent their father from remarrying, as this is a legitimate right granted to men by Allah. His marriage might even be religiously required if one wife is not sufficient for him. Preventing the father could fall under the category of disobedience (uquq) if the father is harmed by such prevention. If the sons fear harm from this marriage, they are permitted to advise their father to abandon the marriage, but without compelling him.
