Is giving charity and increasing a worker's wage beyond what he deserves considered extravagance, especially when there is a conflict between the Hadith "Do not count, lest Allah count against you" and the verse "And give its due on the day of its harvest, and do not be extravagant; indeed, He does not like the extravagant"?

Love of charity and paying the worker his full due, and even more, is a great good. It is considered one of the greatest avenues for drawing closer to Allah, and its reward is greater. Charity is forbidden if it harms the one giving it or someone whose maintenance is obligatory upon him; this is the forbidden extravagance. Charity is disliked if it reduces a person below his complete sufficiency and he does not have patience for that. As for anything other than that, charity is recommended and among the most virtuous deeds.
