Will the 'Isha prayer be counted as a congregational prayer for one who broke their fast and prayed Maghrib, then slept, then woke up to pray 'Isha with the Tarawih congregation?

It is permissible for a Muslim to pray 'Isha behind an Imam leading Tarawih prayers, and by doing so, he attains the reward of congregational prayer. This is the view of some scholars, such as the Shafi'is. However, it is disliked for a Muslim to sleep before the 'Isha prayer. It is preferable for a Muslim to pray 'Isha with the congregation in the mosque, and then also pray Tarawih with the congregation, because some scholars do not consider the validity of praying a fard (obligatory) prayer behind an Imam who is praying a nafilah (supererogatory) prayer.
