Is a marriage contract valid if it was documented at an embassy in a country other than the the bride's, with the absence of her guardian but with his presence and approval?

For a marriage to be valid, the presence of the guardian (wali) or his proxy is required; his mere consent is not sufficient.
If the guardian is unable to attend, he can appoint someone to perform the marriage ceremony for the girl on his behalf. Authorization by proxy (tawkeel) for marriage is permissible through modern communication methods.
