Was Adam created immediately after the creation of the earth in six days, or was there a period of time between them, and what is the evidence for that? And what is the wisdom behind creating the earth in six days, given Allah's power to say "Be, and it is"?

Adam, peace be upon him, was created on Friday during its last hour, as stated in Sahih Muslim. Scholars have differed regarding the duration of the six days in which Adam was created: some said they were like the days of this world, some said they were six thousand days, and some refrained from specifying due to the absence of a decisive text determining their measure, and because time is the relation of events to one another.
