Is it a condition for a person to be considered bewitched that he be completely seized and for the jinn to speak through him, or are there other symptoms and signs of bewitchment that do not necessitate seizure? And what is the ruling of Islamic law on one through whom the jinn speaks while he is in full consciousness?

Magic is real, and it causes harm to the bewitched by the permission of Allah Almighty, as indicated by His saying: "But they could not thus harm anyone except by permission of Allah." Magic may cause illness, death, or affect the mind and sight, or separate a man from his wife. It is not necessary for the bewitched person to be afflicted with an epileptic fit or for the jinn to speak through him.
