Why was the Prophet's prayer not interrupted by Zainab passing in front of him, despite the narration stating, "That is more likely to distract one," and the narration, "A dog, a donkey, and a woman interrupt a man's prayer"?

The aforementioned Hadith is weak due to the unknown identity of Umm Muhammad ibn Qays. Even if the Hadith were authentic, it would not contradict the Ahadith indicating that a woman interrupts prayer, because the woman intended [in those Ahadith] is the menstruating woman. As for Zaynab, who is mentioned, she was young when she passed in front of the Prophet, peace and blessings be upon him.
