Is it permissible to perform a circumcision on my son in France by a non-Muslim male or female doctor, or must we wait until returning home?

There is no religious impediment to seeking medical treatment from non-Muslim doctors, even if it necessitates looking at the major 'awrah (private parts). There is no need to delay treatment; in fact, it should be expedited so that the illness does not worsen. The son should be treated by a male doctor if possible; otherwise, by a female doctor. This applies if his age is seven years or above. As for those younger than that, their 'awrah is not given consideration.
