Why did Allah specifically transform the People of the Sabbath into apes?

Allah Almighty transformed the Jews who transgressed on the Sabbath into apes, because they resorted to trickery to violate the sanctity of the Sabbath day. Thus, their punishment was of the same nature as their deed; just as they distorted the rulings of the religion and disfigured its truth, Allah transformed them into apes, resembling humans in appearance but not in reality.
