If the husband refuses Islam, it is expected that she will comply with Allah's command to avoid him until he embraces Islam. Even if she does not avoid him and remains with him, that does not take her out of faith, and it is better for her than remaining in disbelief. As for the children, her embracing Islam does not change anything in her relationship with them; she is their mother in any case.
