Are demonstrating, gathering, writing banners, and delivering speeches and poems legitimate ways to respond to those who insult the Prophet, peace and blessings be be upon him, and his Companions? If not, how should they be responded to?

The Almighty God forbade insulting the deities of the disbelievers, lest they insult God. For this reason, it is not legislated to insult them or their religion, due to the resulting increase in their evil. A Muslim must not provoke them by insulting them or their disbelief, so that they do not retaliate by insulting Islam. If there are means to deter them without increasing their wickedness, it is permissible to follow them, such as suing them, boycotting their goods, and seeking help from the fair-minded among them. The most important way a Muslim can express his displeasure is by increasing his commitment to his religion and displaying its rituals, and striving to call to it with wisdom, for victory is achieved through "righteousness and reform."
