Is it permissible for a woman to pray in the open, such as praying behind a car, or is it better to delay the prayer and make it up at home?

Performing prayers on time is one of the greatest obligations, and it is not permissible to delay them except for an excuse that allows for the omission of what one is incapable of, or combining two prayers. The wife must pray in an open area or elsewhere, and cover herself with whatever is available, such as a car or other means, if she fears the time will expire. It is not permissible to postpone the prayer until reaching home, for the Prophet, peace and blessings be upon him, said: "The earth has been made for me a place of prayer and a means of purification, so any man from my nation whom the prayer overtakes, let him pray." There is no difference in this ruling between men and women.
