What is the ruling on eating from globally renowned restaurants whose origin is from Scriptural countries, without asking about the slaughter, and this is in non-Scriptural countries?

It is not permissible to eat in non-Muslim restaurants outside of Muslim countries, whether in Japan or Christian countries. This is because Christians slaughter animals using unlawful methods, such as killing by gunshot or electric shock, which does not render the animal permissible to eat, even if a Muslim were to use it. As for the Japanese, they are not People of the Book, and their slaughtered animals are not permissible at all. If a slaughtered animal is found and it is unknown who slaughtered it in a country that includes non-People of the Book, it is not permissible to eat due to doubt regarding the lawful slaughter.
