Is it permissible to sell types of rugs and kitchen mats that bear drawings of foods like fruits and meats, knowing that they are trodden upon and people may wipe their shoes on them?

There is no objection to photographing trees, fruits, and food, nor to stepping on carpets that have such images on them, nor to selling them. The jurists have explicitly stated the permissibility of depicting things that do not possess a soul, such as trees, basing their reasoning on the fact that the prohibition of imagery is specific to living beings (those with souls), and on the hadith of Ibn Abbas which commands the depiction of trees and things without souls, as well as on the permissibility of an animal's image after its head has been cut off, and that Gabriel (peace be upon him) commanded the cutting off of the head of a statue so that it would resemble a tree.
