Can a committed sheikh who recites the Quran, prays, and belongs to a Sufi order practice sorcery using papers containing incomprehensible letters and numbers inside squares, and what should someone who possesses these papers do to get rid of them if it is proven that they are sorcery?

The legitimate ruqyah (exorcism/incantation) is that which is performed using the Qur’an, the Sunnah, and words whose meanings are known. Anything other than that is not permissible to use. Therefore, you must follow the legitimate method of ruqyah, and perform ruqyah on yourself using the Qur’an, the Sunnah, and the established remembrances (adhkar). You should distance yourself from the person and the aforementioned papers, and dispose of them by burning them or erasing what is on them and burying them. It is also necessary to advise this person, explain the error of what he is doing, and warn people against seeking ruqyah from him.
