What is the ruling on one who is affected by the sight of the Eid sacrifice being slaughtered, despite acknowledging that it is one of the greatest acts of drawing near to Allah?

It is preferable for the one offering the sacrifice (al-mudhahhi) to slaughter their own animal. However, if they are unable or unwilling, it is permissible for them to appoint someone else to do it. It is also commendable for them to be present during the slaughter, though not obligatory. The reward of the sacrifice encompasses everyone for whom it was intended.
