Is the popular story about the origin of the croissant, and its symbolism of the Ottoman defeat in Vienna, true or not?

The story of the croissant and the crescent moon has not been found in any authoritative book. However, Wikipedia and some researchers link the creation of croissant bread in the shape of a crescent moon to the Europeans' celebration of their victory over the Ottomans in the Battle of Vienna in 1683 CE, as the Ottoman flag bore the crescent. Dr. Reda Al-Tayeb mentions that the reason for the Ottoman defeat in this battle was the betrayal of the commander of one of the garrisons, who allowed the Crusader reinforcements to pass through.
