Did the wife of Al-Aziz predict that the women would cut their hands by offering each one a knife, and how did their admiration for Yusuf's beauty reach such an extent?

Zulaykha (Potiphar's wife) did not foretell that the women would cut their hands. Rather, that was her insight, knowing Yusuf's beauty and that the women would be captivated by him if they saw him. She prepared for them banquets (a muttaqa') and provided each of them with a sharp knife to facilitate their preoccupation and for them to cut their hands when they saw Yusuf (peace be upon him), who was given half of all beauty.
