What are the rulings concerning sacrificing uncastrated animals for Udhiyah, and is it better? And did the Prophet (peace be upon him) sacrifice such animals?

There is no objection to castrating animals for a benefit. The Prophet, peace and blessings be upon him, sacrificed two castrated rams, which indicates the permissibility of sacrificing a castrated animal and the legitimacy of castration. It is permissible to sacrifice a castrated animal because its meat is more palatable. Some scholars preferred it for this reason, while others held that an uncastrated male is better due to the completeness of its limbs. The Prophet, peace and blessings be upon him, also sacrificed uncastrated males. The best animal for sacrifice is the fattest, most meaty, most perfect in creation, and most beautiful in appearance, whether it is an uncastrated male or a castrated one.
