Is it unlawful for me to take the difference (5 pounds) when I am assigned to photocopy papers for students for 20 pounds, but I actually photocopy them for 15 pounds, knowing that I will pay from my own money first, and then collect the cost of photocopying from the students?

It appears that you are an agent for the teacher and the students, not an employee or a seller. An agent is not permitted to take anything without the knowledge of the one who gives it.
