Is it permissible to eat the meat of an animal sacrificed for 'Eid, which was slaughtered after the pronouncement of "Bismillah" and "Allahu Akbar," but it was found that its esophagus or windpipe was located towards the chest, not towards the head?

It is permissible to consume the animal slaughtered if the glottis (ghalsamah) or the Adam's apple (jawzah) remains, provided it is on the side of the body and not on the side of the head. This is referred to as "al-mughalsamah" (having the glottis remaining). The essential is to cut the trachea (hulqum), the esophagus (mari'), and the two jugular veins (wadajayn). This view is preferred by some scholars, and it is the opinion of the Hanbalis and some Malikis, while others have held it to be impermissible.
