Is it permissible to give a retired friend who is a competitor to the company, documents containing the manufacturing techniques of products specific to the company I work for?

If the technologies are owned by the company or others, it is not permissible to provide your friend or any other entity with them except with the permission of their owners, because patent and copyright laws are protected by and it is not permissible to infringe upon them. A resolution to that effect was issued by the Islamic Fiqh Academy in 1405 AH.
