Is it obligatory to slaughter one sheep or two as a sacrificial offering for Hajj, and is it permissible to eat from it?

If you performed Hajj and your mother performed Qiran or Tamattu‘, then a minimum of one sheep is required from each of you for the hady (sacrificial offering). It is permissible to share in a camel or a cow, with seven shares of the camel or cow counting for one person. However, if you performed Hajj as an individual (Hajj Ifrad), no hady is obligatory for you, but it is recommended to offer it voluntarily. It is permissible to eat from the hady of Tamattu‘, Qiran, and voluntary hady. As for the blood of expiation (dam al-fidyah), it is not permissible to eat from it; rather, it must be distributed to the poor.
