What is Islam's position on what is narrated about the distortion of the Almighty's saying: "It is You we worship and You we ask for help" to "and You seventy or eighty" under the pretext of precaution?

This type of story falls under "joking about the Qur'an," which is forbidden if it includes anything that contradicts the reverence due to the Qur'an. However, if it does not contradict the reverence due to the Qur'an, then there is no harm in it, due to what is established in the pure Sunnah regarding the Prophet's ﷺ jesting, as in the story of the old woman who was told: "An old woman will not enter Paradise," and his ﷺ saying: "Indeed, I only speak the truth" when joking with the Companions. Accordingly, there is no harm in transmitting this type of joke if the one doing so adheres to its controls.
