How can a female student deal with her less-devout parents to convince them to let her leave a mixed-gender university, even though that means giving up a scholarship and delaying graduation, and despite the fact that they consider her remaining at this university a precious opportunity?

The current state of intermingling (ikhtilat) in universities is not permissible due to the corruption it causes to religion and morals.

What is forbidden regarding intermingling is not merely the presence of men and women in one place if they are separate, but rather what is forbidden is the lack of adherence to শরী‘আ (Islamic law) guidelines such as hijab, modesty, absence of private seclusion (khalwa), and lowering the gaze.

If the female student adheres to the শরী‘আ guidelines in her studies, then there is no harm in her continuing, while also obeying her parents. However, it is preferable to transfer to a non-mixed university if possible.
