Is it permissible for an employee to keep the remainder of the money paid by a customer without the employer's knowledge?

If the employment contract stipulates that these monies are not to be taken, then it is not permissible to take them. However, if the café owner does not stipulate that, or if custom dictates that they are yours, or if he explicitly or implicitly permits you to own them, then there is no objection to taking them.
