What is the ruling on eating bread that contains enzymes extracted from a pig?

Pork, in all its parts, is impure. If its inclusion in the composition of food or drink is confirmed before it undergoes processing and its essence changes, then it is not permissible to consume anything that contains it. One should verify information before basing Islamic rulings upon it.
