What is the interpretation of the Almighty's saying: (For those, Allah will change their evil deeds into good deeds), and does this include changing the evil deeds of an apostate into good deeds after his repentance?

It is from Allah Almighty's mercy and kindness to His servants that He forgives those who repent and transforms their evil deeds into good deeds if they are sincere in their repentance. This exception includes both disbelievers and others.

Others understood it as the transformation of sins into good deeds after repentance. It was also said that the transformation refers to forgiveness, meaning Allah forgives them those evil deeds. Another opinion is that the intended meaning of transformation is that the repentant individual is guided to perform acts that are the opposite of their past sins. And it was said that their actions, which were once predisposed to committing evil deeds, transform into good deeds, so their polytheism transforms into faith, their disobedience into obedience, and the very evil deeds they committed transform into good deeds after they repent from them.
