Is it permissible for me to marry a righteous man without the consent of my parents, who reject my marriage to him because of his religion, and can the judge or the imam of the mosque be my guardian in this case, especially since I live in a foreign country, having fled religious persecution in my home country?

If a father prevents his daughter from marrying a suitable man without a legitimate Shar'i reason, she may refer the matter to the Shar'i judge to remove the harm and arrange her marriage, as the Prophet, peace and blessings be upon him, said: "The ruler is the guardian of one who has no guardian." If the father refuses after the ruler orders him to arrange the marriage, she will be married against his will. The mosque imam is not entitled to conduct her marriage merely because he is an imam.
