Drinking coffee with saffron or other perfumes by a pilgrim in a state of ihram does not invalidate the Hajj or Umrah. However, if the saffron has no scent when used, then no fidyah (expiation) is required. The Malikis and some scholars are of the view that there is no fidyah for anything cooked by fire, even if its color or scent remains. But if the saffron has a scent and was not cooked by fire, then fidyah is required, which is: slaughtering a sheep, or feeding six poor persons, or fasting for three days. Cardamom is permissible for a pilgrim in a state of ihram.
