Is it permissible to take a portion of the interest that the court will rule with and donate it as charity, while also taking the recognized salary from the company, as well as what was denied from the salary?

You are not permitted to demand usury to take what you claim is your right. Rather, refer the matter to the court to prove your right. And if the court rules in your favor for more than your right, then the excess is not yours and must be returned to the company.
